Weight Loss Diet, Calorie Counting & Fat Intake?

I hope that someone may be able to shed some light for me. I have been on the Weight Watchers diet before and successfully lost 1.5 stone. I have put on a little weight recently which I would like to loose. However, I am kinda done with calculating “points” value of every morsel I eat.
When doing a calorie controlled diet (i would aim for 1400 calories a day plus exercise) do you literally just count how many calories you are eating? Or do you take into account the amount of fat in foods as well?
I’m going to stick to mainly “healthy” foods such as chicken, wholeweat rice and veg but feel a little confused!
I’m sure this might seem simple to many of you out there but I would appreciate any input!
